Isabel and Josh met while working at a Peruvian restaurant in Portland, Oregon. Josh introduced Isabel to all of his favorite trails and she quickly became an outdoor enthusiast, too. Trail Toddy is inspired by every adventure they have had in the beautiful state of Oregon.

Isabel was born in Colombia and moved to California when she was ten years old. For as long as she can remember she has loved to cook. It was an easy decision for her to attend culinary school in Los Angeles where she graduated with a degree in baking and pastry. She moved to Portland in 2015, fascinated by the city's food scene and its emphasis on seasonality and local farms. She has spent the last five years working as a Pastry Chef at some of Portland's most popular restaurants. In her free time, Isabel enjoys hiking, watching horror movies, and planning weekend getaways with Josh.


Josh was born in London while his family was stationed overseas. He moved back to the states and grew up in Montana through High School. His constant need for new experiences led him to relocate often, living in states like Idaho, Utah, and Hawaii. When he made the decision to attend school for a degree in Accounting he chose to settle in Oregon knowing that there would always be something new to explore in the Pacific Northwest. Josh has a great passion for backpacking, fishing, and biking. He loves to visit cabins, preferably ones with an outdoor fire pit and hot tub.


Trail Toddy Co. sources all their spices and tea from Essential Organics, a family-owned and operated company based out of Bellingham, Washington. Their citrus is always organically grown in California and their honey is always from Mickelberry Gardens located just outside Portland, Oregon.
